The Greatest French Chef of All Time

In this week's episode (available on the podcast tab above), I tell you about Auguste Escoffier, the most influential French chef of all time. Escoffier's innovations extend beyond recipés into how restaurants are run, the profession of chef, and how food is served. In collaboration with famous hotelier Cesar Ritz, he redefined luxury and opened the doors of society to the new monied classes.


Among the sources I used was a documentary from the BBC which features British chef Michael Roux as narrator.


Importantly, there's a very readable biography of Ritz and Escoffier by Luke Barr that pays close attention to their work at the Savoy Hotel in London. I used it extensively.
